We are, unabashedly, Chardonnay lovers. It always has a place at our table. As we often reach for whites over red to pair with summer dinners, our favorite expressions of this versatile varietal are both elegant and restrained all at once. Cool fermentations in exclusively neutral oak vessels helps preserve the delicate aromas of the fruit itself. The 2021 Chardonnay is our third release from this rugged site just outside of Yakima, Washington, and our first time aging it in exclusively neutral oak. The wine is balanced with a kiss of oak on the palate, as it had an extended élevage of 18 months on its lees.
Bursting with aromatics, notes of lemon curd, clotted cream, and freshly baked sourdough loaves jump from the glass, leading to a dewy palate that combines the freshness and warmth of late spring days. The honey, floral, ripe pear, and white flower notes are balanced by clean moss and fresh grass, making this the first wine we reach for on a Sunday afternoon in the garden. It embodies the feeling of finding a patch of sun to lounge in before summer’s heat sets in. What to pair with this luscious wine? Think grilled salmon and asparagus, Caesar salads with homemade croutons, lobster bisque, or a seafood chowder. For dessert? Flaked pastry with fruit compote, or a custardy Basque cheesecake.
