This is our first release of a Cabernet Sauvignon from Hedges Vineyard. We love this site and this fruit for many reasons. The Red Mountain AVA is unique as the hottest AVA in Washington but its particular sandy loam soil adds to the richness and boldness of the wines. Working with the Hedges family is also wonderful for their commitment to organic and biodynamic farming practices. They take such amazing care of their fruit and it’s always so beautiful.
Our 2021 Hedges Cabernet Sauvignon is fresh, vibrant, and dark-fruited. True to the variety, this cab pleasantly sports notes of ripe blackberries, allspice, black pepper, and dried flowers. A savory umami component complements its fruitiness, and the palate gives velvety tannin and high acidity. This lighter-handed style of Cab Sauv boasts some versatility when it comes to food pairing. Steak frites? Of course! But also French dip, hamburger helper, seared tuna, and grilled veggies. Did someone say shish kabobs?
