This Riesling brings together fruit from three Washington vineyards — Pear Ridge, Areté, and Paradisos del Sol — all harvested in 2022. Each site offers a distinct expression of Riesling, and blending them allowed us to build a wine with both depth and lift. After primary fermentation and élevage, fermentation was restarted in 2023 using fresh juice from Areté Vineyard. The wine finished fermenting in a sealed pressure tank before being counter-pressure bottled. It’s a method we developed — half-jokingly referred to as the “Char-Nat” method — combining elements of pét-nat and Charmat. We still consider it a pét-nat because the sparkle is entirely natural, created through fermentation without additives or manipulation. Riesling was one of the earliest grapes planted in Washington and remains one of the state’s defining white varieties. This wine is both a nod to that history and a fresh interpretation of it.
Starfruit, tangerine, and a subtle hint of pool toy lift from the glass. The palate shows sour pineapple, yellow apple, and lime rind, with touches of honey and flinty wet stone. High acidity and lightly frizzante, it finishes crisp and refreshing.
