This cider is made from five heritage apple varieties grown at Tonnemaker Hill Farm: Winesap, Arkansas Black, Golden Russet, Ashmead’s Kernel, and Newtown Pippin. Each variety brings its own balance of tannin, acidity, and aromatics, allowing us to build complexity without manipulation. Pressed fresh and fermented with minimal intervention, the cider is bottled unfiltered and without added SO₂. It reflects the orchard honestly.
Naturally cloudy in the glass. Aromas of white flowers and eucalyptus lift from the glass, layered with honeyed apple, cardamom, and a hint of citrus zest. The palate is medium-acid with low alcohol, offering baked apple, fresh tang, and a subtle hop-like brightness reminiscent of Citra. Soft, creamy texture with a plush, rounded finish.
